It's All About That Spice! (Room Education Zone)

World traveler Expert Chefs and Writers talk about the history of spice and Ethnic spice as the new darling of mainstream restaurant menus. 
 

Led by moderator, Gerry will introduce the panelists, and the expanded interest and use of “ethnic” spices in mainstream restaurant menus and health products. We will have samples of the newest expanded versions of ethnic spices that are going mainstream for the audience. 

Dr. Linda Civitello, author of Culture and Cuisine, Baking Powder Wars, will speak on the role of spices in baking.  She will be serving two of her cakes, 1796 White Rose Gingerbread and a1872 Coffee Spice Cake.  They will be offered as people come in, and they will have to wait to hear the explanation.

Chef Robert Danhi will talk about the role of spice in his most recent travels in Southeast Asia.

Executive Chef Bernard Guillas: Spice Mixology LaJolla, will address the culture of spices gained from his international travels and describe the “spice of life via mixology.” He will explain formulas and how to blend unique spices from ancient lands “to add excitement” to any meal.  
 

Two gift boxes from Spice Islands will be raffled off and the newest spice grinder from Melissa's Produce!
