Allosteric modulators are the proverbial volume switch for cell surface receptors. To address today’s health crises related to over consumption of sugar and salt, and to enable use of higher levels of healthy but taste challenged ingredients, cell-based discovery platforms were developed. These platforms utilized high throughput screening with native taste receptor cell lines, followed by rapid sensory screening. Results indicated high translation to sensory while avoiding complications associated with dual-use ingredients, since the receptors are not directly activated by allostery. Modulators were compounded into finished flavor systems and used to enable up to 50% reduction in sweeteners, salt, and bitterness.
