Mainstream consumers are increasingly looking for heat. Not only are consumers wanting spicier foods, but they also want flavor and heat level differentiation. Specialty peppers are unique in heat level, color, size and flavor profiles leaving consumers more options than they have ever had before. Global cuisines are often recognized to have characteristics of unique specialty peppers, so when used in mainstream applications they provide authentic ethnic flavor profiles. This presentation will discuss all things specialty pepper related – principles, pungency, flavor profiles and ethnic cuisines.
