The food industry as a whole is increasingly impacted by consumer trends focusing on health and wellness, food ingredient transparency and sustainability. Tonucci will discuss how these rapidly evolving consumer trends impact the flavor industry in two ways. In the short term, consumer products companies react to consumer demands and interests by modifying and improving their product portfolios. In the long term, governments respond by updating their regulations to support new technologies, scientific knowledge or consumer interests.

These short- and long-term pressures drive improvements in flavor delivery technology, formulation evolution and ingredient development. These drivers also set the stage for a challenging and ever-changing compliance landscape that impacts how we can apply new food technologies to improve flavor science.
