Demo: Working with Ancient Grains (Room Show Floor Demo Area)

With ancient and alternative grains more readily available than ever before, bakers are itching to incorporate them into their tried-and-true formulas. However, the fear of cost and reliability in attaining the grains can be a deterrent in trying something new. In this session we will look at my journey in trying to incorporate some of these grains into enriched artisan styled doughs and find out what where some of the stumbling blocks as well as successes that I have discovered. We will dive into doughtolerances and what becomes a cost prohibitive track that no longer makes it financially rewarding.
