Nick Sierputowski is a Florida native who was born and raised in Winter Park. He pursued cooking after years of watching Food Network shows and trusting his intuition that the next step in any career decision is committing to developing your passion. Sierputowski graduated from Orlando Culinary Academy in 2005 and learned quickly from the best in the industry, before landing in his now 10 year career with the Swine Family. He started at the top working under James Beard Award-winning chef, Norman Van Aken and his then Executive Chef, Clayton Miller, at Van Aken’s namesake restaurant, Norman’s at The Ritz-Carlton Orlando. He learned the best in modern “fusion” from the founding father of New World Cuisine, which he says allows him to find beauty in mixing unexpected flavors. Sierputowski continued his career in Orlando at Luma on Park, a neighborhood mainstay lead by Chef Brandon McGlamery. It was there that Sierputowski met James and Julie Petrakis, a husband/wife chef duo looking to open one of Orlando’s first gastropubs. Sierputowski was part of the opening team for Petrakis’ The Ravenous Pig in 2007, which opened to award-winning fanfare and recognition from the James Beard Foundation. A line cook position quickly blossomed into a family-like bond between Sierputowski and the Petrakis’. Over the years he has held many positions at the various dining establishing run by the Swine Family, including Chef de Cuisine at Cask & Larder and today coming full circle as Chef de Cuisine at The Ravenous Pig. As Chef de Cuisine, Sierputowski is responsible for managing The Ravenous Pig’s seasonal-changing menu alongside Chef James and Julie, and their circle of local farmers; the latter who he says often “drop off boxes of random produce that is fresh and in season.” He believes in the importance of seasonality and providing the customer the best in what is available, plus, he says “it challenges him to be spontaneous.”
