Tammy Valdes is a long-time restaurateur, spending over 20 years at Darden in various positions beginning as a busser then restaurant management moving to the support center in beverage marketing then Operations Excellence and Brand Integration. She currently leads the Earl of Sandwich brand in the Earl Enterprise (Planet Hollywood) portfolio. Tammy oversees restaurant operations along with other restaurant departments such as training, culinary & beverage, food safety, franchising and new restaurant openings. As a parent of a food allergy child, understanding allergens and food safety became a personal passion and quest for knowledge. This passion paired with the responsibility Tammy faces daily to ensure EVERY guest with a food allergy is served safely has provided Tammy the opportunity to increase allergen knowledge within the restaurant teams developing & implementing standards/procedures in the Earl of Sandwich brand to ensure food allergy safety.
