The path to the perfect biscuit can be long & winding, but for Trina Gregory-Propst, her Grammie showed her the shortcuts. From that close childhood bond with her grandmother, Trina would go on to have such a love for delicious comfort fare and well-appointed meals that she’d spend all her free time experimenting with recipes, while still whipping up the classics she was taught. As someone who built a flourishing career in the spa industry for over 21 years, baking was her passionate hobby. She crafted legendary cakes & desserts for family & friends. Trina’s heart pounded with the dream of one day owning a sweet & savory bakeshop. But she didn’t want to build an empire without a solid foundation and went back to school at Valencia College, earning 3 Bachelors degrees in Culinary Arts, Baking & Pastry Management & Restaurant Management. Once she found a small building in the Milk District of Orlando, she opened Se7enbites in October 2013. Her main goal was merely to “put a smile in her customers’ bellies” with delicious brunch classics & unique sweets. She hesitantly turned that “closed” sign to “open” & wondered if anyone would come. They came in droves for her biscuits, chicken potpie, always on point aqua frescas, savory bread puddings, & more. Alongside her wife, VA, they opened a closely located larger Se7enbites in the fall of 2016. The frosting on the cake of Trina’s career was getting to appear on an episode of Guy Fieri’s “ Diners, Drive-Ins, and Dives.” & most recently 3 episodes of Guys Grocery Games. When she’s not baking up a storm and greeting the family of customers she’s built from all over the country, Trina can be found spending time with her son, tending to her beloved rescue cats, searching local shops for sparkly objects, and enjoying quiet brunches with her friends. She is an avid supporter in the LBGTQ community, mentor for local culinary students, and women’s empowerment advocate.
