Dr. Johnson has served as Senior Scientist at the Wisconsin Center for Dairy Research since 1980. He teaches cheese making and grading courses for industry. Mark’s main areas of interest are developing manufacturing and ripening protocols for specialty cheeses. Mark has served as a technical judge for the American Cheese Society, Australian Grand Dairy Awards, and U.S. and World Championship Cheese Contests.
