Bob Wills is owner of Cedar Grove Cheese in Plain Wisconsin and Clock Shadow Creamery in Milwaukee. Bob is a Wisconsin Master Cheesemaker. He serves on the board of the American Cheese Society and the American Cheese Education Foundation. Bob is co-chair with Marianne Smukowski of ACS’s Academic and Regulatory Committee which, among other projects, is drafting a Best Practices Manual for cheese makers. That manual has a particular goal to provide readily accessible information about food safety procedures for small, artisan and specialty cheese makers. Cedar Grove Cheese and Clock Shadow Creamery provide training and collaborative-workspace opportunities to many of Wisconsin’s finest cheese artisans.
