"Trish Dawson is a Senior Scientist with Chr. Hansen, Inc. in Milwaukee, Wisconsin. She received her Bachelors and Master’s Degrees in Microbiology from The University of New South Wales (UNSW) in Australia. Dawson’s work has spanned the fields of marine biofilm formation, microbial nitrogen fixation, bio-fermentation processes and isolation and characterization of microorganisms. She has worked with starter cultures and their applications in the dairy industry for more than 20 years in both Australia and North America. Dawson currently focuses on cultures and enzymes in the production of cheese and works closely with culture development scientists and cheesemakers to manage strong, consistent, phage robust culture programs."
