Hewn Bakery
Ellen King author of the new book Heritage Baking and co-owner of Hewn Bakery in Evanston, IL. She holds an MA in American history from the University of Maine and attended the Seattle Culinary Academy. She began delivering bread on her bicycle to her “Underground Bread Club,” and in 2013, she and Julie Matthei opened Hewn with the goal of providing genuine products, sustainably grown and thoughtfully made. Her first cookbook, Hewn Heritage Baking (fall 2018)pays homage to the small, sustainable grain farmers and artisan millers her bakery works with. She serves on the Evanston Environment Board and is a member of the Chefs Collaborative, Women Chefs and Restaurateurs, and The Bread Bakers Guild of America.
