Food service operations run smoothly for the most part on a day-to-day basis. A great deal of preparation and care go in to making an operation safe. But what happens when there is a food safety crisis, such as an alleged foodborne illness complaint, a wide-range food recall, or a loss of utilities for an unknown duration, such as a loss of power or an interruption in your potable water supply? Do you know what to expect from your regulator when they arrive on your doorstep to follow-up on a foodborne illness complaint, or after a flood or fire? Understanding what will be expected from a regulator during or after a food safety crisis will assist you in returning to normal business. Being prepared for any food safety crisis will also help in developing the correct messaging that is so critical in response to or after a significant crisis.
