Alternate dairy cheeses are produced either using fermentation or mixing of flavor compounds. Flavor remains the biggest challenge in this segment of dairy alternatives, which has a projected CAGR of 11.7% by 2022. This talk will compare and contrast traditional dairy cheeses and alternate dairy cheeses and postulate how to close the flavor gap.
