Paul Alward, Farmer and Co-founder of a local food company will discuss the many logistics and supply challenges of sourcing seasonal produce, local frozen produce, regionally raised proteins, and shelf stable/pantry items. Having worked directly with restaurants for over 14 years, Paul understands the challenges they face as they try to incorporate local sourcing. In this session, he will discuss the Pro's and Con's facing the chef and the farmer, price, consistency, quality, reliability, transparency, seasonality, processing, market access, and distribution.
