Monoammoniated glycyrrhizinate (MAG) is a derivative of glycyrrhizin, found naturally in licorice root. MAG has a delayed onset of sweetness that masks off-flavors from plant proteins. This presentation will explore how a pea protein powdered shake was formulated with MAG and found to effectively reduce off-flavors associated with pea proteins.
