Throughout the world, citrus fruits are considered both healthy and delicious. This has led to increasing consumption of fresh citrus fruits. It is not surprising, as the demand has increased for oranges, lemons and limes, new varieties are becoming more and more popular, including clementine, yuzu, tarocco, and Moro blood oranges and Tardivo di Ciaculli mandarins. This presentation will explore less popular but tasty profiles, and their possible uses.
