Flavor and food labeling concepts are essential to consider during flavor and product development. This presentation will discuss the Flavor Extract Manufacturers Association (FEMA) and its history, as well as investigate some of the critical issues facing flavorists and product developers today, including “natural” labeling, the potential impacts of federal regulatory activity surrounding the disclosure of biotechnology in food and California’s Prop 65.
