Flavorings with Modifying Properties (FMPs)

Flavorings with modifying properties (FMPs) are increasingly used by the flavor and food industry to modify or enhance the flavor profile of a flavoring and the finished food to which it is added. FMPs may not necessarily impart a specific characteristic flavor of their own, but they can modify the flavor profile by altering flavor attributes, optimizing the taste and odor profile, or masking the bitterness and/or off-notes.

In the last few years, the development of these FMPs has helped to address consumer desire for healthier food alternatives, including reductions in sugar and salt, without compromising taste and odor.  

This presentation will discuss various features of FMPs from a flavor and food perspective, including chemical, sensory, regulatory and labeling aspects.
