The growth in vegetarian and halal markets is driving the flavor industry to find new, creative means to impart savory flavors on completely meat-free products. Reaction flavors, also known as process flavors or thermo process flavors, impart no flavoring by themselves, but when cooked by consumers, react to form new flavor profiles. Qualifying and labeling reaction flavors can be confusing, since they fall outside some of the regulatory definitions for natural flavors. Discussed will be a review of the regulatory requirements in the U.S. and EU for labeling reaction flavors and a review of import factors in qualifying these materials.
