What are confections? How should they be flavored? Does science help? These are all questions which need to be answered in order to successfully flavor confections. Starting with an aliquot of history, and converting some of “the confectioner’s art” into science, Stephen Wolf will explain some of the necessary principles for in flavoring confections. This is particularly important today since much of the “art” doesn’t work once modern concerns, like sugar and fat reduction as well as labeling, become important.
