The demand for kosher products is on the rise; there are 12,350,000 kosher consumers in the US, alone, with nearly 80% of all kosher food sales attributed to outside the “traditional” Jewish market. Kosher’s appeal to diverse ethnic groups, vegetarians and vegans, those with specific health concerns such as lactose, gluten and shellfish intolerance--in addition to its perceived mark of quality and added value--are contributing factors to its effectiveness as a global marketing tool.
