Black Garlic is garlic that has been aged under controlled conditions of humidity and heat for up to two months. At the end of that time it no longer resembles, smells or taste like garlic. It more closely resembles the color and texture of a date. It has a kind of fruity, balsamic vinegar taste. For years it has been used in high-end cuisine.
