Booth 127

Kodama-Gun, Saitama
      Japan

YAMAKI JOZO is located in a beautiful mountain village surrounded by organic fields in the northwest of Saitama Prefecture in Japan. Since 1902, we have produced traditional Japanese foods such as shoyu (soy sauce), miso, pickles, tofu, and soy milk following centuries-old methods. YAMAKI JOZO uses Japan-grown organic ingredients and crops and vegetables consciously grown by contract farmers who generally do not use pesticides, chemical fertilizers, or weed killers. We use local mountain spring water, and don't add chemical seasonings or preservatives to our products. Our artisanal products are filled with natural and rich flavors and energy thanks to these exceptional locally sourced ingredients.

YAMAKI JOZO’s unchanging corporate philosophy is to preserve our nature resources and hand them down to the next generation. In addition, we have continued using the same cedar barrels and traditional crafting methods that we have used for over 115 years. Our craftsmen’s techniques have been passed down to preserve the traditional taste of our products and have been trusted by many households across multiple generations.
