So What Is Pão de Queijo?









While pão de queijo translates as “cheese bread,” it is not a loaf of bread garnished with cheese. Nor is it cheese melted on bread. It’s not a cheese cracker or cheese flatbread. It’s completely different, because the basic ingredient used to make pão de queijo is not traditional wheat flour, but rather Brazilian cassava, a tuberous tropical native plant and a Brazilian national staple food. 









Origins of a Ubiquitous Treat





A few hundred years ago, colonial Portuguese cattle ranchers in the state of Minas Gerais, the heart of Brazil’s culinary culture, had plenty of milk and cheese but no wheat, which was scarce. So the colonists took their lead from indigenous people, who had been using cassava starch for hundreds of years. Eventually cheese was added to the mix, and little spheres were baked to create pão de queijo, which quickly spread throughout the country.
