Laura Burns came to brewing after studying the stress responses of S. cerevisiae in her PhD. After finishing her graduate work, she decided to apply all of her yeast knowledge to her passion for beer. Keeping yeast healthy and happy in the brewery meant determining the ideal methods for propagations, re-pitching, and harvesting. Now with 5 years of Head Brewer experience, Laura has moved back into the lab at Omega Yeast where she is developing new methods and yeast strains for the brewing community.
