Professor Michelle Colgrave is a Principal Research Scientist at CSIRO Agriculture and Food and Research Professorial Fellow at Edith Cowan University in Australia. Michelle employs mass spectrometry (MS) and proteomics to help identify key proteins that will benefit Australia’s agricultural industries and improve human health. An example of her success in this field is in the application of MS to guide plant breeding, which has supported the development of the world’s first and only gluten-free barley, Kebari®. Kebari has the potential to provide novel healthy foods, malt and beverages for those who require a gluten-free diet and has now been commercialised as Pionier by the German brewer Radeberger. She will be sharing the progress her team has made in gluten detection in fermented and hydrolyzed foods and beverages.
