Apizza Scholls
Brian has been baking professionally since 1987. In 2000 he founded his own bakery, Olive Mountain Baking Co. and became a board member of the Bread Bakers Guild of America. In 2004, he put his dough knowledge to work on pizza, opening the highly acclaimed Apizza Scholls, serving what many have been described as “New York-meets-Connecticut”. Brian Spangler's reputation quickly went far beyond his Portland, Oregon location as he consulted for new and existing pizzerias around the country as well as appeared in many TV shows, magazine articles and books.
