Long before gluten-free was a buzzword, Steven Rice realized the potential opportunity in this niche. As owner of a successful restaurant in the bustling Los Angeles Farmer’s Market, he noticed a demand for better-tasting baked gluten-free goods. This simple observation proved so compelling, Steve parlayed 15 years in the restaurant business into a new venture. In 1993, Authentic Foods, a line of premium gluten-free flours and baking mixes, was born. His first product, Falafel Mix, was an immediate hit and continues to be in demand more than 20 years later. Steven’s expertise extends far beyond his food service background. With a degree in Biochemistry from the University of Southern California, Steven is an authority on gluten-free chemistry and recipe development. While developing Authentic Foods, he tested hundreds of recipes before finally perfecting a flour formula that mimics the taste, texture and workability of wheat. As a result, Authentic Foods quickly became a go-to brand for the celiac community, with its product line totaling more than 20 gluten-free flours and baking mixes. Today, Steven is still experimenting in the test kitchen to perfect Authentic Foods’ offerings. His goal is to create delicious, high quality products that everyone can enjoy, even if they do not have gluten sensitivities.
