Di Donfrancesco is pursuing a doctorate in sensory analysis and consumer behavior at the Sensory Analysis Center at Kansas State University. He also works as an instructor teaching the “Science of Food” course in the Human Nutrition Department at the university. He received a bachelor of science in aquaculture and ichthyopathology and a master of science in health and quality of animal-based products from the University of Bologna (Italy). Di Donfrancesco previously worked at the State Veterinary Institute in Italy before moving to the US. His research interests focus on sensory analysis applied to pet food. In 2012 he published, with Kadri Koppel, PhD, and Edgar Chambers IV, PhD, the first sensory lexicon specific for dry dog food products.
