Mill City Food Solutions is an agency specializing in grain innovation. Casper holds a master’s degree in food science from the University of Wisconsin and a bachelor’s degree in food science and technology from Iowa State University. Previously, he served as R&D director at Cargill and R&D manager within a Cargill joint venture, Horizon Milling, leading research on grain ingredients and phytochemical-rich grain fractions in pet food. Casper has presented at American Association of Cereal Chemists International (AACCI) annual meetings, is author or co-author of several journal articles and co-authored the book Gluten Free Baked Products published by AACCI Press. He served on the scientific advisory board of the Grains for Health Foundation and is a member of the Institute of Food Technologists and American Oil Chemists Society.
