SIU Fermentation Science Institute
Matt McCarroll is a professor of chemistry and biochemistry and director of the Fermentation Science Institute at Southern Illinois University. He led the effort to establish the Fermentation Science Institute and the BS degree in fermentation science, which is currently one of six four-year degree programs in north America recognized by the Master Brewers Association of the Americas. He established Windy Hill Hops Farm & Brewshop in 2010 with his wife Jen and is active in the homebrewing and judging communities.
