In 2007 T.J. Schier founded SMART Restaurant Group, which now operates 15 Which Wich Superior Sandwiches shops. He tests cutting-edge hiring, guest survey and training methods in his company and applies them as a consultant providing custom training materials and guest-services programs. He has written several books and developed operational training materials for Coca-Cola, Kraft, Evian and selected leading restaurant and hotel chains.
