Tim is a San Diego native with 40 years of service in Food and Beverage, primarily in Hotel/Casino/Private Club operations. He is an accomplished Executive Chef and Department Director. Tim has been carving ice for more than 30 years. He is environmentally alert and takes the initiative to significantly reduce the carbon impact of his employers. His recycling efforts earned him The ‘Rammy’ award for Recycling 2 years in a row from the City of Rancho Mirage, while Executive Chef at Agua Caliente Casino Resort Spa. He has commuted over 20,000 miles to work by bicycle over the last 5 years. He has initiated a successful Food Waste Recycling program at River Rock Casino, capturing thousands of pounds of food waste per week, that is converted to compost. He intends to inspire other properties to do the same.
