Chef Sam Marvin, CEO of the restaurant group The Goat LLC, is the visionary who turned an idle downtown LA neighborhood into a food mecca with his highly-acclaimed Bottega Louie. A veteran of LA’s famed Patina, Marvin also created the noted Melrose café Modada in the mid-90s and was credited with jumpstarting the fondue revival. Marvin and his longstanding team designed Bottega Louie to bring guests into a memorable and unique environment - down to the color of the macaroons in the bakery case to the type-face used on the butcher paper menus. It is this attention to detail and an eye for international culinary tradition, rooted in his work in some of Europe’s great restaurants, that Sam and his team brings to every new restaurant venture. While Marvin pays infinite attention to every detail in each project he creates, his philosophy is based upon simplicity. Marvin finds the best quality food products and cooks them to perfection. For Marvin, there are no short cuts to creating good food - a torchon de foie grass is a 3 day process and a veal stock is 24 hours not 12! Along with this culinary mantra, Marvin creates an atmosphere that instantly evokes one’s senses and takes the guest on an unforgettable journey.
