Creating a Food Safety and Quality Management Plan for a Grain Elevator (Room Ballroom D)

OPENING WORKSHOP EVALUATION (Click Here)

The Food Safety Modernization Act (FSMA) has given regulatory emphasis to the already growing world food market trend of requiring proof of operating practices that protect food safety. Grain elevators, because they only hold or store food products, are exempt from having a formal hazard analysis and preventive control plan supported by a specific set of good manufacturing practices. However, many other FSMA provisions apply, and the market is likely to impose some form of food safety management on grain handling, because elevators become suppliers subject to monitoring for grain users. This workshop will provide training in creation food safety management plans for elevators that can be used as verification food and feed users alike. Participants will have a class exercise to create clear food safety management protocols in the style of third-party audit food safety/quality management systems used by many food companies.
