cookbook_maple.jpegWaitsfield, VT – Tonewood Maple unveils new additions to its award-winning product line by pairing artisanal maple products with some of the most acclaimed cheeses in the country from Jasper Hill Farm, Vermont Creamery and von Trapp Farmstead.  See first-hand a demonstration of the new Maple Cube & Microplane Cube Grater Gift Set. Tonewood founder Dori Ross will grate pure maple cubes over Jasper Hill’s Bayley Hazen Blue, drizzle maple cream over Vermont Creamery’s Cremont and pair maple flakes and maple syrup with Von Trapp’s Mt. Alice Camembert-style cheese, creating a unique cheese and maple board.  The new Grater Gift Set allows consumers to add the perfect amount of maple sweetness to their own cheese pairings, entrees and snacks.  In addition, the new Maple Grade Collection Gift Set with Recipe Booklet showcases the range of color and intensity of flavor available in pure maple syrups from Tonewood.  A new product addition – Maple Granules – will also be unveiled at the show.

 

Sample recipe cards from the upcoming launch of Katie Webster’s new maple cookbook, featuring 100 sweet and savory recipes, will be available at the Tonewood booth.   The book will be on display featuring the cover recipe: Brie with Maple, Walnuts, and Figs.

 

Tonewood showcases the versatility of maple in many forms such as flakes, cubes, wafers, cream, and granules featuring one single ingredient: 100% pure maple syrup. Tonewood is working towards a sustainable future for the maple sugaring industry with their successful Adopt a Maple Tree program. Because maple production relies on the weather to create harvesting conditions, climate change is a major concern for the industry. Over the past forty years, the harvesting season has decreased in length and shifted to occur earlier in the year. These changes are the result of warmer winters and earlier thaws. Unless climate change is controlled, the United States maple harvesting industry might disappear entirely within the next half century. As a 1% for the Planet member, Tonewood seeks to protect U.S. maple production by donating to the Proctor Maple Research Center at the University of Vermont. The Center is a leader in maple research and education, with a focus on improving harvesting technology and understanding maple tree physiology and health. Through support of the Proctor Center’s climate change research efforts, Tonewood hopes to ensure maple production in New England for many generations. 

 

As the accolades and awards build, Tonewood, since launching in 2012, has maintained one ingredient throughout its product line: pure maple syrup. There are many nutritional benefits of 100% pure maple syrup. Maple is lower in calories than white sugar, honey, molasses, and agave. Maple, a super food, is low on the glycemic index and is high in minerals such as iron, zinc and manganese.
